I love getting creative with my morning oatmeal recipes, because it can be like having dessert for breakfast! After perfecting my Pumpkin Pie Oats and Apple Pie Oatmeal, I knew I wanted to find a way to create a healthier, gluten-free, every day alternative to my soft and pillowy Vegan Cinnamon Rolls.

This cinnamon roll oatmeal recipe is hitting all targets while still being healthy, wholesome, and made with whole-food ingredients. It’s truly the best of both worlds and the perfect addition to a well balanced vegan diet.

Ingredient Notes

You’ll need just 8 simple ingredients to make a bowl of oatmeal that tastes like an actual cinnamon roll. Here are the basics you won’t want to skip:

  • Oats: My favourite type of oats to use are rolled oats or old-fashioned oats. They’re quicker cooking than steel cut oats, yet heartier than quick oats or instant oatmeal. If you are gluten-free, make sure to pick up a bag of certified gluten-free oats. 
  • Chia seeds: Adds essential omegas and healthy fats as well to thicken the oats into a rich and creamy consistency. 
  • Cinnamon: A necessity when making cinnamon rolls in any form! For the best cinnamon flavour, I recommend adding to both the oats and cinnamon butter drizzle. 
  • Almond milk: If you make my recipes on the regular, you know I love my Homemade Almond Milk. It’s so easy to make in my trusty Vitamix (check out my other must-have essentials in a vegan kitchen here!) and is much more rich and creamy than store-bought alternatives. If you’re allergic to nuts, try soy milk, oat milk, or coconut milk. 
  • Maple syrup: Adds the perfect amount of sweetness with a sweet caramel taste that complements the warmth in the cinnamon. If needed, replace the maple with a sweetener of choice such as light brown sugar or coconut sugar. 
  • Cream cheese: In order to make these cinnamon roll oats healthier and vegan-friendly, I used my Plain Tofu Cream Cheese (don’t worry – it doesn’t taste like tofu!). You can also use a store-bought vegan cream cheese, or swap in a dollop of plain or vanilla Coconut Yogurt for a lighter twist on cream cheese frosting! 
  • Vegan butter: If you’ve made my Classic Vegan Cinnamon Rolls, you’ll know they’re filled with an irresistible cinnamon butter mixture. To recreate this, we’re drizzling our bowl of oats with a cinnamon butter mixture. Trust me when I say it’s the perfect finishing touch!

How to Make Cinnamon Roll Oatmeal

Making hot cinnamon roll oats from scratch requires just 4 simple steps. 

1. First, combine the oats, chia seeds, pinch of salt, and cinnamon in a saucepan, followed by the almond milk, maple syrup, and vanilla extract. Bring the oats mixture to a boil over medium high heat, stirring occasionally. 

2. Once boiling, reduce the heat to a simmer, and continue to cook the oats for 5 minutes, or until thickened to your desired oatmeal consistency. 

3. When the oatmeal has thickened, stir through the cream cheese and remove the cinnamon roll oatmeal from the heat. 

4. Lastly, in a small skillet, melt the vegan butter over medium heat. Once melted, remove from the heat and stir in the cinnamon until well combined. 

5. Scoop the oatmeal into individual serving bowls and drizzle with the cinnamon butter mixture and enjoy! 

Storage Instructions 

Leftover oats will keep in the fridge for up to 5 days and will reheat best in the microwave or in a small saucepan over low heat on the stovetop. 

​After refrigeration, the oatmeal will thicken. To make it thin and creamy again, add a few splashes of your favourite non-dairy milk of choice until your desired consistency is reached.

Can I Make This an Overnight Oats Recipe?

I have only enjoyed these oats as a hot oatmeal and have not tested a cinnamon roll overnight oats recipe just yet. Overnight oats typically require an altered liquid to dry ratio and would need additional testing to balance the wet ingredients and dry ingredients.

METHOD

  • In a saucepan combine the oats, chia, and cinnamon. Stir to combine. Pour in the almond milk, maple syrup, and vanilla extract. Bring to boil on medium high heat, stir together and then reduce heat to a simmer.
  • Cook the oatmeal for 5 minutes, or until thickened and desired oatmeal consistency. (Optional to add splashes more milk if desired for thinning).
  • When the oatmeal has thickened, stir through the cream cheese. Remove from heat and set aside.
  • In a separate small skillet, melt the vegan butter on medium heat. Remove from heat and stir in the cinnamon. Set aside.
  • Scoop the oatmeal into bowls and drizzle with the cinnamon butter mixture. (Or alternatively, add the cinnamon butter mixture to the saucepan with the cooked oatmeal and swirl it in. Then scoop into bowls).

Notes

This recipe will keep in the fridge for up to 5 days. Reheat in the microwave or on the stovetop.
