What I love most about this recipe is that it’s a healthy spin on traditional caesar salad, made vegan with a wholesome and simple vegan caesar dressing, crunchy chickpeas (in replace of croutons) and optional vegan parmesan cheese.

This vegan caesar salad is so easy to make. Which is why I have given it my newbie cook stamp of approval. The ingredients are simple and it comes together effortlessly.
You can also prepare the salad dressing and roasted chickpeas in advance to make it extra quick to toss together.
You are going to LOVE this vegan caesar dressing! It’s creamy, tangy, and refreshing.
Just 3 ingredients makes up the base of this recipe: Tahini, lemon, and dijon mustard. It’s healthy and wholesome, and likely you already have the ingredients on hand. The recipe is not only vegan, but it’s also gluten-free, oil-free and sugar-free.

In my opinion, this homemade vegan caesar dressing is so much tastier than store bought brands. Plus it takes minutes to whip together.
I’ve never had much success with finding a good vegan caesar dressing brand; and I’ve tried my fair share. If you’re interested, here is a list of top favourite vegan caesar dressing brands from Peta. (Perhaps I’m a tad more picky than them, since I’ve tried many on this list. But if you ask me, my homemade version is SO much tastier, more wholesome, and it’s easy to make!).
I’ve topped this recipe with crunchy roasted chickpeas, for a little protein and crunch! Making crunchy roasted chickpeas in the oven is very simple, and it’s a healthy substitution for traditional croutons.
Using crunchy roasted chickpeas also keeps this recipe gluten-free.
We will make the crunchy roasted chickpeas by tossing them in a little oil, sea salt and pepper. Roast in the oven at 400F/200C until crispy, about 30 minutes.
If you prefer, you can also buy store-bought crunchy chickpeas.
