Hey friends! I wanted to share this quick Gourmet Avocado Toast with you for a little toast-spiration. We all know avocado toast is here to stay, but it’s not just tomatoes that pairs so beautifully with the beloved avo. There are plenty of options to dress up your avo toast so you can stand out from the crowd – everyone will be pleading for a bite.

Low and behind this berry avocado blend: with avocado and strawberries, or avocado and cherries. We’re making the most of berry season with these! Lush berries are in full swing, a moment I’ve long been waiting for, and these toast make for a summer gourmet feast. Haven’t tried the berry/avocado blend yet? Well, you are in for a treat! Like yin and yang, avocado and berries are a perfect balance of savoury, creamy and sweet. Add crunchy wholewheat toast to the mix and it will blow your taste buds to heaven and back.

I know you might be thinking, “Just three ingredients? That’s not really a recipe, Hannah…” And okay, I get it. But this post is about sharing simple ingredients and simple steps that can change the way you avo snack, and diversify it from the classic versions.  This post isn’t about introducing a super innovative, jaw dropping, or uber trendy recipe – it’s about inspiring you to spruce up that avo toast and try something new! After all, how come avocados get all the credit? These berries are a key player in making this avo toast gourmet.

It’s time to get creative! Try adding a few cherries or strawberries to your avo toast. Or perhaps peaches, grapefruit, or pineapple for heavens sake! The options are endless, and you’re never going to know what you like most until you try.

I discovered that strawberries and avocados were a gorgeous blend a while back, but this was the first time I tried avos and cherries. I love the texture of these two ingredients together – it’s crunchy, sweet, creamy and smooth. It reminded me of the cherry tomatoes I typically top my avo toast with, but a sweet version instead.

Adding fruit to toast is also a great option in general if you’re craving something a little sweet – but still want to keep it on the healthier side. I will often add fruit to toast as it’s lower in sugars and calories than store bought jam.

Ask me which I prefer? Avocado and cherries, or avocado and strawberries, and I honestly can’t tell you. They are both a dream, and top of my avo toast topper list. So, it seems I’ll have to let you be the judge!

Serves 4 toasts

Ingredients

  • 4 slices whole wheat bread toasted
  • 1/2 cup cherries halved, pits removed
  • 1/2 cup strawberries chopped
  • 2 avocados
  • squeeze lemon juice
  • pinch sea salt and pepper
  • aged balsamic vinegar

Instructions

  • In a bowl mash avocados to preferred consistency, add a squeeze of lemon juice and mix to combine.
  • Top toasts with mashed avocado. Decorate two toasts with berries. Sprinkle with sea salt and pepper. Drizzle with balsamic vinaigrette.
