Gourmet Avocado Toast

Try adding fresh berries to your avocado toast, to make it a little more gourmet. These are topped with fresh strawberries and cherries, with balsamic to drizzle.

Ingredients

  • 4 slices whole wheat bread toasted
  • 1/2 cup cherries halved, pits removed
  • 1/2 cup strawberries chopped
  • 2 avocados
  • squeeze lemon juice
  • pinch sea salt and pepper
  • aged balsamic vinegar

Instructions

  • In a bowl mash avocados to preferred consistency, add a squeeze of lemon juice and mix to combine.
  • Top toasts with mashed avocado. Decorate two toasts with berries. Sprinkle with sea salt and pepper. Drizzle with balsamic vinaigrette.
