Hi Friends! Today I’m sharing this easy cookie dough bites recipe. They’re sweet, and doughy, with crunchy chocolate chips in every bite.

These cookie dough bites are vegan, gluten-free, and healthy. They’re made with eight simple ingredients.

Certainly, you can feel good about noshing on these no-bake bites. It’s perfect for fixing your sweet tooth craving, guilt-free. Enjoy them for snack-time, or an after dinner dessert.

Now, let me tell you exactly how to make these bites so you can enjoy them pronto!

Chocolate Chip Cookie Dough Bites

The Ingredients

Typically, when we think of raw cookie dough bites, we think of Ben and Jerry’s infamous snackable cookie dough. Certainly, we have them to thank for the raw cookie dough bite trend. But, B&J’s version is a little on the unhealthy side…

So, I’ve made a healthier and just as delicious version; using wholesome ingredients, so you can snack guilt-free. There’s nothing refined or highly processed in this recipe. It’s easy to make and you know exactly what’s inside.

And I promise you, these healthy cookie dough bites are nothing short of delicious! In fact, I’d say it’s better than any store-bought version.

So, here is what you’ll need to make this recipe:

  • oat flour (ground oats)
  • almond flour
  • almond butter
  • maple syrup
  • coconut oil
  • vanilla extract
  • sea salt
  • chocolate chips

As you can see the ingredients are simple and straight forward. There is nothing strange or finicky about this recipe. Which is why I have given it my newbie cook stamp of approval.

In addition, I’ve also given it my fit girl stamp of approval. Since I mentioned, this is a whole foods sweet treat that you can feel good about snacking on.

All-in-all this recipe uses clean and simple ingredients. Apart from the chocolate chips there is nothing unhealthy about this recipe – and if you ask me, a little chocolate is good for the soul.

Certainly, one cookie dough bite hits the spot for a sweet tooth fix.

Now, making these chocolate chip cookie dough bites couldn’t be simpler.

To make this recipe we will combine all the ingredients into a large mixing bowl, except for the chocolate chips. (Save those to the end).

Mix together to form a dough, then sprinkle in your chocolate chips and mix again to combine.

Next, roll the dough with your hands into bite sized balls until you’ve used all your dough. That’s all folks! I told you it was easy peasy, didn’t I?

All-in-all this recipe takes no longer than 15 minutes to make.

Tips for this recipe

Now, I didn’t have any trouble with the dough being too sticky for rolling. But, if you are experience this problem you can chill the dough for 30 minutes in the fridge. Chilled dough is more malleable and less sticky to handle.

Alternatively, if you’re noticing that your hands are getting sticky after rolling a few balls,  I recommend to wash your hands, wipe clean and continue. I do this often when making cookie recipes (raw or baked). Clean hands make for easy rolling.

Finally, if any chocolate chips fall out of the dough balls while rolling, you can stick them onto the surface of the finished balls at the end.

How long do these cookie dough bites keep?

These cookie dough bites will keep in the fridge for up to 10 days. Store in an air-tight container.

Cookie Dough Bites

These no-bake cookie dough bites are sweet, doughy and full of chocolate chunks! They're great for a sweet-tooth fix.

Ingredients

  • 3/4 cup gluten-free oats
  • 3/4 cup almond flour (ground blanched almonds)
  • 1/2 cup almond butter
  • 3 tbsp maple syrup
  • 1 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Pulse oats in a blender or food processor until finely ground. In a large mixing bowl combine the oat flour, almond flour, almond butter, maple syrup, melted coconut oil, vanilla extract, and sea salt. Mix well to combine.
  • Add chocolate chips and mix again to combine. Then, form dough balls by rolling dough with hands (about the size of a ping-ping ball). Continue rolling until you've used all your batter.

Notes

If the dough is too sticky to roll you can chill in the fridge for 30 mins. Chilled dough is more malleable and less sticky to handle. (I didn't have this problem).

    These are incredible!! I’ve made a few different no-bake cookie balls before and these are by far my favourite. I’m so impressed by the combination of these simple ingredients. It’s so nice to have a treat that’s so delicious in addition to being pretty healthy too! I plan to make these very often and can’t wait to make them for my friends and family 🙂
