Vegan or not, everyone can get on board with a killer caesar salad recipe and this vegan caesar salad does not disappoint! So, let me tell you exactly how to make this recipe.

Romaine Lettuce: A classic lettuce for caesar salad keeping this recipe ultra traditional. I have recipe tested with other baby spinach, kale and even cabbage and it’s delicious!
Chickpeas: Roasted in the oven until crispy. This is a great whole foods alternative to croutons because you still get the crunch, and a great vegan swap for chicken for a salad that sticks with you.
Vegan Parmesan: I used store-bought for this recipe. It adds beautiful cheesy flavour. I recipe tested without the parm and it was still delish!
5-Minute Vegan Caesar Dressing: This recipe uses my 5-minute caesar dressing using tahini, dijon mustard and lemon juice. It’s so easy, tangy and perfect for this salad recipe!
How to make this vegan caesar salad:
Roast the chickpeas at 400F/200C for 20 minutes, or until crispy. add tahini, dijon, lemon juice and pepper to a bowl.Add about 2 tablespoons of water to thin the dressing to your desired consistency. Chop the romain and add to a bowl, drizzle with the tahini based vegan caesar dressing.Toss to combine. Then add the vegan parmesan and toss again.Transfer to a serving dish and top with the crispy chickpeas. Serve and enjoy!

This Vegan Caesar Salad is crunchy and tangy, made with crisp romaine lettuce, crunchy roasted chickpeas and a simple vegan caesar salad dressing with tahini.
Make the crunchy roasted chickpeas: Pre-heat oven to 400F/200C. Line a baking sheet with parchment paper. Pat the chickpeas very dry and toss into a medium bowl with the olive oil, sea salt and pepper. Toss to combine. Pour the seasoned chickpeas onto the baking sheet and roast until crunchy and golden, 30 to 35 minutes. Stir after 20 minutes for an even bake. Let cool.
In a large mixing bowl, add the romaine lettuce and pour in 1 batch of the Vegan Caesar Dressing. Toss to combine. Sprinkle with vegan parmesan cheese (optional) and toss again. Transfer the salad to a serving bowl and sprinkle with the crunchy roasted chickpeas.
