Would you like a slice of this Stawberry and Cream Bruschetta? There’s only three ingredients for this sweet, creamy and lush bruschetta recipe. It’s a delicious summer inspired toast that you can enjoy for breakfast, snack time or as a sweet appetizer.
So, I’m going to keep this blog post short and sweet because that’s exactly what this strawberry and cream bruschetta recipe is. A sweet toast recipe – bruschetta style – starting with toasted baguette, smothered in coconut yogurt and topped with seasonal strawberries.
For the cream in this recipe, I’m referring to the coconut yogurt. Coconut yogurt is so creamy and dreamy, which makes it a lovely whipped cream alternative for vegans or the health-conscious. And it pairs so nicely with strawberries. It’s fluffy and creamy, with probiotics that are good for our gut. So I’ll often use it instead of whipped cream. I like using coconut yogurt to top on toast, pancakes and crepes.
I like to make this strawberry and cream bruschetta when strawberry season is among us. Early summer brings the sweetest most lush strawberries and I’ll take any chance to feast on them. Indeed, this strawberry and cream bruschetta makes an ideal opportunity.
I love using fresh seasonal fruits instead of jam as a healthier topping to toast. You’re looking at way less sugar with no additives. Plus, strawberry season offers such lush, sweet and juicy strawberries that we can say good-bye to real jam and embrace jammy fruits.
Needless to say, fruit on toast is a gorgeous combo. Ever heard of peanut butter and banana toast? Now it’s time to try your hand at some other tasty combos. I will often top my toast with coconut yogurt and fresh fruit like this strawberry and cream bruschetta, or I’ll use nut butter and fresh fruit.
If you haven’t tried adding fresh fruit to your toast I highly encourage you to give it a try. It’s a very easy way to lower your sugar intake and opt-in for a more healthy version to jam.
I would encourage you to make this recipe when you want to eat it, and not prepare in advanced. The strawberries and coyo topping can get soggy after some time, so best to put together just before serving.
However, the good news is that this recipe is quick and easy to make. Simply toast sliced baguette and spread on a thick layer of coconut yogurt. Top with fresh strawberries and you’re looking at a gourmet sweet bruschetta. Optional to drizzle with chocolate sauce or honey for some extra pizzaz.
Preparing this recipe should take no longer than 5 minutes of your time, and if you want to make it even faster than you can chop the strawberries in advance.
