Monday begins by sinking my teeth into this Peanut Butter and Coconut Yogurt Toast. It’s a comforting recipe, with few ingredients for a gourmet toast. Spread thick with peanut butter onto sourdough toast, a dollop of coconut yogurt, agave, walnuts and dark chocolate chips.
I love a simple toast recipe like this because it takes seconds to throw together, but tastes like something you’d pay $16 for at a trendy cafe.
This recipe combines sweet and savoury, crunchy and creamy flavours. It’s a dream combo that’s ultra lush and decadent. I’ve used a thick slice of sourdough toast for the base. It’s so hearty and wholesome. And the chunks of walnuts and chocolate chips adds extra crunch!
All-in-all it’s a flavour packed dream toast that you can achieve in a few simple steps.
Since the ingredients are so few and simple, the results will taste even better using quality ingredients.
For example, I bought a sourdough loaf from the bakery for premium taste. There is nothing more cozy and comforting than freshly baked bread! I highly recommend getting a quality loaf from the bakers for this gourmet toast.
The same goes for buying quality spreads. I like to use 100% all-natural peanut butter. Meaning there is only ONE ingredient: pureed peanuts. It may sound obvious, but a lot peanut butter brands add sugar or oil blends to improve taste and consistency.
Read package labels to ensure you are choosing an all-natural peanut butter with only peanuts in the ingredient list. There are a variety of good peanut butter brands on the market, but I’ll always shop the organic section to find the best all-natural spreads.
I’m often asked which type of coconut yogurt I use, and it really depends on where you live as to what’s available. My advice when choosing a coconut yogurt brand is to read the ingredient list on the packaging. There should only be a few ingredients that are easy to understand, and I like to pick ones with no added sugar. You can always sweeten the yogurt yourself with maple syrup or agave, and be more in control of the final result. Opt-in for a quality coconut yogurt with a simple and understandable ingredient list.
Since this recipe is so straight forward it’s easy to master. My only advice is to choose quality ingredients to really enhance the taste. I.e. choosing quality peanut butters, coconut yogurt, and quality bread.
I like to make this toast for a quick breakfast or snack. When I have guests over and we are planning a busy day, it’s easy to throw together for breakfast. Yet, it’s much more impressive than offering them toast with jam.
The recipe should be made just before serving, so that the toast is warm, and the peanut butter melty. If you prepare ahead of time there is a chance the coconut yogurt will seep into your bread making it a tad too soggy. Plus, who wants to eat cold toast?

Hi Jein! Consistency for peanut butter really depends on each brand, so it can be a big of trial and error until you find your perfect match. I really like the brand MaraNatha for smooth and runny peanut butter. Good luck with your peanut butter tasting!!
