Say hello to this vegan grilled cheese. Your vegan prayers have been answered with this one! This is a quick and comforting grilled cheese sandwich made with vegan mozzarella cheese, sandwiched between buttery sourdough bread and pan fried until golden. Drooling yet?

It’s quick and easy, comforting, salty and savoury. As for the homemade cheese; expect ultra stretchy, melty and cheesy flavour. (i.e. everything we could dream of for a vegan mozzarella).

Certainly, it’s popular with both the kids and adults. Enjoy this recipe for a quick and comforting lunch or dinner.

Now, let me tell you exactly how to make this recipe so you can enjoy it pronto.

vegan grilled cheese recipe that's so easy and comforting

Easy Vegan Grilled Cheese

The Ingredients:

For this recipe, you will need:

  • vegan mozzarella
  • sourdough bread
  • vegan butter (or coconut oil)
  • sea salt

As you can see, it’s pretty simple and straight forward. I’ve used my homemade vegan mozzarella recipe for the filing. Because it’s perfect for melty and stretchy cheese that’s full of flavour. I love using it for this grilled cheese, lasagna, and basically any recipe where I’m looking for melty stretchy cheese.

What’s the best vegan cheese for grilled cheese

Certainly, there are some good vegan mozzarella brands to buy, instead of making it yourself. Which offer consistency that’s also melty and stretchy. I’m not opposed to these brands. In fact, I use them from time-to-time for parties and entertaining.

However, the nutrition facts for store-bought vegan mozzarella can be a tad unhealthy. Since they use ingredients like starches, gums and carrageenan for longer shelf-life.

No doubt, making vegan mozzarella at home is a healthy solution. You know exactly what’s gone into it – no preservatives or additives. The recipe is minimal and can be made in just 10 minutes. So you can feel confident in knowing exactly what you’re putting in your body.

How to make a vegan grilled cheese

Making this vegan grilled cheese couldn’t be easier. Simply lather two pieces of bread with vegan butter and sprinkle with sea salt. I like to lather both sides so that even the inside of your grilled cheese will be crispy. (It’s a little trick of mine for extra gourmet grilled cheese).

Bring a skillet to medium heat and toast the bread slices until golden in colour, then flip and toast the other side. Once it’s ready, finish by lathering each toast with vegan mozzarella, and then flip one slice of bread onto the other. Voila, now you’ve got an ultra comforting, salty and savoury grilled cheese that’s ready to be devoured.

I made this grilled cheese for lunch for both my husband and I. We were so impressed! It tastes sooo good! Much better than the store bought brands. My husband use to LOVE dairy cheese but wants to eat vegan. Having this recipe, that he really enjoys, is making it much easier for him to eat vegan!! We can’t wait to try it with Tostitos chips, salsa and guacamole next!
