Sushi Donuts - Avocado and Mango

Hi everyone!

Wanted to share another Sushi Donut Recipe with you, this time with a little savoury and a little sweet. How about we take care of dinner and dessert? After my first sushi donut recipe was such a hit I figured I’d do another version. This time using avocado for the savoury donuts, and mango for the sweet. These proved the perfect feast for our evening picnic, along side a bottle of wine, and quinoa salad. Ahh, I love how I can talk about picnicking again, isn’t this warm weather the best!?

So, to begin I want you to rest assured: making your own Sushi Donuts is not difficult. All you need is some sushi rice, toppings and preferably a donut mould. The rice takes all but 15 minutes to cook, and the time needed to decorate is really up to you. If you don’t have a donut mould you can try rolling the sushi into little balls, flattening a bit with your hand, and then poking through the middle to make a circle with a chopstick. Easy peasy donut squeezy.

In a few easy steps you’ve got donuts for dinner! I love these sushi donuts because they are a fresh and light summer food, and are so much fun to make for date night or with kids. And just like a pizza, you can decorate them however you fancy. I’ve used avocado for mine (because the avo  addiction is real my friends). I sprinkled them with fresh chives and dill, and served with tamari to dip. In the past I’ve also added cucumber, radish, and carrot on top, which makes a stellar sushi donut combo too. As for the sweet version, I’ve decorated with fresh mango and sprinkled with carob chips, coconut shavings, and served with coconut milk to dip. The combination is cosmic. And reminds me so much of the mango sticky rice dessert I would order when we were in Thailand. Omg, if you haven’t tried this mango sticky rice you are in for a treat with these!

As you can see I got a little creative with my decorating, cutting the mango and avocado into stars and circles, but it’s obviously NOT necessary. I really just did this because it’s so cute! I promise it tastes the same no matter how you slice it. But, if you want to make these cute shapes too (which is esp. fun for kids), I suggest making a trip to the dollar star and getting some little star cookie cut outs, mine are about one inch wide.

And there we have it! Some simple sushi donuts for dinner and dessert to dip and munch. Nothing better than having some donuts for dinner. Amirite? This recipe proves that just because we want something simple doesn’t mean it needs to be boring. It’s time to get creative and have a little fun in our kitchen! And let’s be honest, everything is yummier when it’s in the shape of a donut!

Serves 12 donuts

Ingredients

  • 3 cups water
  • 2 cups uncooked sushi rice
  • 1/2 cup rice vinegar
  • 1/4 cup white sugar
  • 1 tsp salt
  • 1 tbsp sesame oil
  • coconut oil for moulding
  • 1 mango
  • 1 avocado
  • tamari to dip (for savoury sushi donuts)
  • 1/2 can coconut milk to dip (for sweet sushi donuts)
  • 1 tbsp agave to dip (for sweet sushi donuts)

Instructions

  • And water and rice to a pot and bring to boil. Then reduce heat to simmer, cover with a lid, and cook for 20 minutes, or until cooked through.
  • Meanwhile, in a saucepan combine rice vinegar, sugar, salt and sesame oil. Bring to low heat and stir to combine.
  • When rice is cooked remove pour in the liquid mixture in batches, stirring rice to combine.
  • Cover rice with clean dish towel and let sit for 10-15 minutes. Then scoop rice onto a clean surface or wide bowl and spread out to cool slightly before handling.
  • Thinly slice avocado and mango. When rice is cool enough to handle lather donut moulds with a bit of coconut oil. (I used a 6-cavity silicon donut mould for this). Scoop rice into donut moulds to fill. Then inverse mould onto a flat surface to remove donut shapes. (If your hands are sticking to the rice, wet hands with water and continue).
  • Decorate each donut with avocado or mango. Serve with tamari to dip for the avocado sushi donuts. In a small bowl, whisk together coconut milk and agave. Serve as dip for the mango donuts.
