Hiya everyone! How is your day going? Mine is a bit mad as I spent all morning running around the city for meetings. It seems I’ve bit off more than I can chew, and I wish I were talking about these tasty stone fruit toasties. I’m going to keep this blog post simple and sweet, much like this recipe. Let’s get to it.
As you can see this is a quick and easy 5-minute recipe for stone fruit toasties with a coconut almond butter spread. You can enjoy this recipe at breakfast or snack time. What I love about this recipe is that it makes the most of stone fruits as the topping, instead of traditional sugar-rich jams. It’s a much healthier alternative to the traditional while still getting our sweet fix. I love topping my toast with all types of fruits instead of store-bought jam; from strawberries to persimmon, and classic banana.
Since stone fruits are so lush at the moment it was a no brainer to put it on my toast! They’re just so juicy and sweet right now. But, what also makes this toast divine is the sweet coconut almond butter spread. This simple spread requires only 3-ingredients and will change your toast game. Made by combining coconut yogurt with almond butter and a bit of honey, this is a sweet whipped spread that I could eat like frosting.
I’ve spread this coconut almond butter spread atop of wholewheat toast, and layered with slices of peach, and red and yellow plums. I’ve then added a few optional blueberries and mint to sprinkle, although not entirely necessary. (I did it more so for styling reasons).
All-in-all it’s a simple recipe that’s so gourmet! I’ve included the recipe for these toasties, and that lush coconut almond butter spread below. Not only would the spread work well lathered on top of toast, but it makes a wonderful dip for strawberries or sliced apple at snack-time, or as an icing for protein donuts.
