Why You’ll Love My Recipe
This overnight oats recipe uses whole chia seeds in the mixture, which truly enhances the texture of overnight oats! They absorb the almond milk nicely and offer a really nice pudding consistency to the overnight oats. Most overnight oats recipes don’t use chia and I find the texture isn’t as nice – it’s often more mushy and watery; but the chia makes for a perfect consistency.
This overnight oats recipe is also a great base recipe; you can top with whatever fruits you like, crunchy toppings and nut butters to make it truly different every time. It’s a must have recipe that everyone needs in their back pocket.

The Ingredients
The ingredients for this recipe are simple and straight-forward. Likely, you have everything you need in your pantry. For this recipe you will need:
Oats: My preference is the rolled oats as they absorb liquid really nicely while still maintining good structure and chewiness as time passes. I did recipe test this with quick oats, but I found the overnight oats to be too mushy; and it didn’t absorb the almond milk as well.
Chia seeds: Whole chia seeds are used in this recipe. They absorb the almond milk nicely and offer a really nice pudding consistency to the overnight oats – which is my preference and why I wanted to share this recipe! Most overnight oats recipes don’t use chia and I find the texture isn’t as nice.
Almond milk: Any store bought almond milk works great in this recipe. For extra creaminess, I love to use my homemade almond milk.
Maple syrup: For a touch of sweetness. This is optional, I like a splash for light sweetness. Another great option is to pair this recipe with banana for natural sweetness.
As you can see there’s no fancy ingredients on this list! Likely you already have them in your pantry, but if you don’t they are easy to find at most generic grocery stores.

In a small bowl, combine the oats, chia, cinnamon and salt. Whisk in the almond milk, and maple syrup, ensuring no clumps are formed. Let the overnight oats sit for 5 minutes, then whisk again. Chill in the fridge, covered with reusable wrap, for at least 20-minutes or overnight.
When ready to serve, top the overnight oats with your favourite toppings. I like peanut butter and banana or raspberries (see blog post for other ideas).

Yum!! I used your recommendation and I made this recipe in an empty peanut butter jar, with a little peanut butter left inside. This was revolutionary lol. Your recipe makes enough for 2, so I ate half one morning and the last half the next day. It was even more delicious the second day because the oats had soaked everything up even more. It was so delicious. I feel like this is the best way to make overnight oats!
I love doing this with my overnight oats! Why let that peanut butter go to waste? hehe. And I agree, waiting overnight for the oats to soak always tastes best. Although it’s a real test of patience to wait! hehe. Glad you enjoyed this recipe. 🙂
