Why You’ll Love My Recipe
Typically, when we think of raw cookie dough bites, we think of Ben and Jerry’s infamous snackable cookie dough. Certainly, we have them to thank for the raw cookie dough bite trend. But, B&J’s version is a little on the junk food side…
So, I’ve made a more wholesome and just as delicious version; using simple pantry ingredients, so you can snack guilt-free. It’s easy to make and you know exactly what’s inside.
And I promise you, these simple cookie dough bites are nothing short of delicious! In fact, I’d say it’s better than any store-bought version.

The Ingredients
This recipe takes just 15 minutes to make! It’s so quick and simple and using basic pantry ingredients that you likely have on hand. Here’s what you’ll need:
Oat flour: Or, ground rolled-oats, are the base of this recipe. I prefer using the oat flour (or ground oats) vs. whole oats because the texture is smooth and soft instead of gritty and too chewy.
Almond flour: Another flour alternative that’s used in this recipe, keeping it vegan and gluten-free and adding a lovely almond flavour; plus this flour will help to keep you full and satiated!
Almond butter: Adding to the delicious almond flavour, and helps with binding as these cookie dough bites are raw. I also recipe tested this with smooth natural peanut butter and it was delish!
Maple syrup: My preference for a natural sweetener, and also helps with binding. I also recipe tested this with agave and it was delish, but I prefer the maple flavour that you get with the maple syrup.
Vegan chocolate chips: Use you favourite brand of vegan chocolate chips for this recipe. I prefer to use the mini chocolate chips as I feel they work easier with rolling in this raw cookie dough bites recipe.

Tips for this recipe
Now, I didn’t have any trouble with the dough being too sticky for rolling. But, if you are experience this problem you can chill the dough for 30 minutes in the fridge. Chilled dough is more malleable and less sticky to handle.
Alternatively, if you’re noticing that your hands are getting sticky after rolling a few balls, I recommend to wash your hands, wipe clean and continue. I do this often when making cookie recipes (raw or baked). Clean hands make for easy rolling.
Finally, if any chocolate chips fall out of the dough balls while rolling, you can stick them onto the surface of the finished balls at the end.
So there we have it, a very simple recipe for chocolate chip cookie dough bites that you can enjoy for a sweet snack or after dinner dessert. They’re vegan and gluten-free and best of all, they’re so easy to make with just 8 wholesome ingredients.
Certainly, everyone will love these cookie dough bites – vegan or not!

Pulse oats in a blender or food processor until finely ground. In a large mixing bowl combine the oat flour, almond flour, almond butter, maple syrup, melted coconut oil, vanilla extract, and sea salt. Mix well to combine.
Add chocolate chips and mix again to combine. Then, form dough balls by rolling dough with hands (about the size of a ping-ping ball). Continue rolling until you've used all your batter.
