A simple vegan pulled pork made with canned jackfruit, bbq sauce and spices. Simmered until soft for a pull-apart, stringy and chewy consistency that's so much like pulled pork. A great meat-alternative for vegans! Top on burgers with homemade vegan coleslaw!
Add the olive oil and sliced onions to a medium skillet and sauté on a medium heat until softened and slightly golden, 4 minutes.
Add the jackfruit and oregano and cumin and stir together, then add the BBQ sauce and water and stir to combine. Lower the heat to a low simmer, cover the pan and leave to stew and soften, about 30 minutes.
Remove the lid and use two forks to shred the jackfruit directly in the pan. Increase the heat to medium high and cook for a couple of minutes if needed until just thick. If thick already, add a little water until just sloppy!
Serve on toasted hamburger buns with vegan coleslaw and fresh coriander.
Notes
Jackfruit pulled pork will keep in the fridge for up to 5 days. Store in an air-tight container. Reheat in the microwave or in a skillet. Recipe can also be frozen for up to 3 months.
