25-Minute BBQ Jackfruit Pulled Pork

A simple vegan pulled pork made with canned jackfruit, bbq sauce and spices. Simmered until soft for a pull-apart, stringy and chewy consistency that's so much like pulled pork. A great meat-alternative for vegans! Top on burgers with homemade vegan coleslaw!

Ingredients

Jackfruit pulled pork

  • 2 20-ounce cans young green jackfruit , in water or brine 
  • 1 tbsp olive oil
  • 1 small yellow onion , thinly sliced
  • 1 cup BBQ sauce (or store bought)
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1/4-1/2 cup water

For the burgers:

  • 8 burger buns (gluten-free optional)
  • 1-2 cups vegan coleslaw (optional for topping or serving)
  • 1/4 cup fresh cilantro finely chopped (for sprinkling)

Instructions

  • Drain and rinse the jackfruit. Set aside.
  • Add the olive oil and sliced onions to a medium skillet and sauté on a medium heat until softened and slightly golden, 4 minutes. 
  • Add the jackfruit and oregano and cumin and stir together, then add the BBQ sauce and water and stir to combine. Lower the heat to a low simmer, cover the pan and leave to stew and soften, about 30 minutes. 
  • Remove the lid and use two forks to shred the jackfruit directly in the pan. Increase the heat to medium high and cook for a couple of minutes if needed until just thick. If thick already, add a little water until just sloppy! 
  •  Serve on toasted hamburger buns with vegan coleslaw and fresh coriander. 

Notes

Jackfruit pulled pork will keep in the fridge for up to 5 days. Store in an air-tight container. Reheat in the microwave or in a skillet. 
Recipe can also be frozen for up to 3 months. Let thaw completely, then reheat in the microwave or in a skillet. 
Store any leftover sauce in the fridge in a sealed glass jar for a week
