Overnight Steel Cut Oats with Chia Seeds (no cook!)

No cook vegan overnight steel cut oats! Made with steel cut oats, chia seeds and peanut butter. Prepare the recipe and let it soak overnight. Come morning you have a deliciously soft and pleasantly chewy oatmeal.

  • In a medium mixing bowl (microwave safe) add the almond milk, maple syrup and peanut butter. Whisk to combine. Pour in the still cut oats, chia seeds, cinnamon and a pinch of sea salt. Whisk again.
  • Microwave the mixture for 2 minutes, stir again. Cover and refrigerate the oat mixture until thickened to an oatmeal consistency (6 to 12 hours). When ready to eat, serve in bowls and add your favourite toppings. (I used banana, blackberries, peanut butter and coconut flakes).

Notes

Overnight steel cut oats can be made up to 3 days in advance. Store in an air-tight container in the fridge. 
I have tested this recipe with steel cut oats and quick cooking steel cut oats. Both work well!
