These maple roasted carrots make a perfect side dish for entertaining. Made with maple syrup and fresh thyme, it's a simple side dish that is sure to impress.
Preheat oven to 400F/200C. Combine oil, maple syrup, thyme and a pinch of salt in a small bowl. Whisk to combine.
Line a baking tray with parchment paper. Slice carrots in half (vertically down the middle) and lay carrots cut side down. Paint carrots (both sides) with maple oil. Sprinkle with salt and pepper,
Bake carrots for 20 minutes. Then remove from oven, drizzle with remaining maple oil and place back in the oven, cut side up, to cook for another 10-20 minutes, or until golden.
When cooked remove carrots from oven and decorate onto serving plate. Sprinkle with pomegranate seeds.
