Frozen Mixed Berry Chia Pudding with Almond Milk

Easy, simple, and delicious berry chia pudding made by blending frozen mixed berries with almond milk, and chia seeds. This berry chia pudding is sweet, berry loaded, and very easy to meal-prep. Enjoy topped with coconut yogurt, granola and more berries!

Ingredients

Optional Toppings

  • dollop coconut yogurt
  • handful granola
  • handful fresh mixed berries (I like strawberries, raspberries and blueberries)

Instructions

  • Add almond milk, frozen mixed berries, maple syrup and cinnamon to a blender. Blend on high until smooth, about 30 seconds. Pour the chia seeds into the blender mixture and blend on low speed for 10 seconds to combine. (This will incorporate the chia seeds evenly while maintaining their structure).
  • Pour the chia mixture into a medium mixing bowl and whisk again with a fork. Wait 5 minutes and then whisk one more time to ensure everything is evenly separated before placing the fridge.
  • Refridgerate for at least 20 minutes, or overnight. When ready, transfer to jars or cups and add your favourite toppings. I like a dollop of coconut yogurt, granola and fresh berries.

Notes

Recipe will keep in the fridge for up to 5 days.
