Apple Pie Compote

Here is a delicious apple pie compote that you can use to top yogurt and oatmeal. Or, use as a base for crumble or pie. It's the perfect recipe for any wrinkly apples you have laying around.

  • Peel and core your apples, and cut into thin slices. Toss your apples into a saucepan with coconut sugar, corn starch, water, lemon juice, vanilla extract, cinnamon, nutmeg and salt.


  • Bring apples to a boil, then reduce heat to a simmer to cook. Continue to boil until apples are desired consistency (approx. 30 minutes in total). Add more water to thin and more coconut sugar to sweeten if desired. Use compote as a base for pie filling, crumble filling, topped on yogurt or oatmeal, or enjoy on its own.

*Note: This apple compote can made ahead, and will keep in the fridge for up to one week.
