Chop sweet potato into wedges, about  1/2 inch thick at the ends.

Place the sweet potatoes in a bowl and mix together with the oil, thyme, salt, garlic powder, onion powder, pepper and chili flakes.

Toss onto a baking tray lined with parchment paper. Spread out ensuring there is adequate space between each, and they are not over-crowded.

Step 4

Bake at 450F/230C for 20 minutes. Then flip the potatoes to roast the other side, bake for 15 more minutes, or until crispy and golden.

Step 5

Transfer to a serving bowl and serve with my homemade vegan ranch for dipping.
