In a high speed blender, add all of the ingredients.

Blend until smooth.

Step 3

Pour the batter into the pan,  cooking 2 or 3 at a time.

Step 4

Cook until little tiny bubbles cover the surface of the pancakes. Flip and the other side until golden brown on the bottom.

Step 5

Repeat until all the pancakes are finished. Serve with maple syrup and toppings of choice.
