Cauliflower Nachos (Vegan)

Cut cauliflower florets into bite-sized pieces.

Chop the red onion, tomatoes, and jalapeno. Grate the vegan mozzarella.

Step 3

In a large mixing bowl, drizzle the cauliflower florets with oil and add the nutritional yeast, chili powder, garlic powder, onion powder, cumin and salt.  Mix to combine.

Step 4

Add the cauliflower to a baking tray and roast at 425F/220C for 20 minutes, or until crispy and golden brown.

Step 5

Sprinkle the roasted cauliflower with black beans, tomatoes, onion, jalapeno, and vegan mozzarella. 

Step 6

Place back in the oven to melt the mozzarella, about 5 minutes.

Step 7

Sprinkle with cilantro and serve!
