Overnight Steel Cut Oats

Overnight steel cut oats are just as easy to make as traditional overnight oats. They're wholesome, sweet, and a comforting breakfast with a delicious chewy and nutty texture. Enjoy all the pleasures of steel cut oats without turning on the stove!

  • 1 3/4 cup unsweetened almond milk
  • 1 1/2 tsp maple syrup
  • 2 tbsp peanut butter
  • 1 cup steel cut oats
  • 1 tbsp chia seeds
  • 1/4 tsp cinnamon
  • pinch sea salt


  • In a medium mixing bowl (microwave safe) add the almond milk, maple syrup and peanut butter. Whisk to combine. Pour in the still cut oats, chia seeds, cinnamon and a pinch of sea salt. Whisk again.
  • Microwave the mixture for 1 minute, stir again. Cover and refrigerate the oat mixture until thickened to an oatmeal consistency (6 to 12 hours). When ready to eat, serve in bowls and add your favourite toppings. (I used banana, blackberries, peanut butter and coconut flakes).


Overnight steel cut oats can be made up to 3 days in advance. Store in an air-tight container in the fridge. 
I have tested this recipe with steel cut oats and quick cooking steel cut oats. Both work well!
