Vegan Ranch Dressing

This vegan ranch dressing is smooth and creamy, garlicky and herby. Enjoy drizzled over your favourite greens, or as a dip for fresh and crunchy veggies.

Ingredients

  • 1 cup raw cashews
  • 3/4 cup hot water , plus splashes more if needed
  • 3 tbsp lemon juice
  • 1 clove garlic
  • ½ tsp sea salt
  • Pinch pepper
  • ¼ tsp onion powder
  • 1 tsp maple syrup
  • 1 tsp mustard
  • 1 tsp dried coriander
  • 1 tbsp fresh dill to sprinkle

Instructions

  • In a blender, add raw cashews, hot water, lemon juice, maple syrup, garlic, mustard, dried coriander, sea salt, onion powder and a pinch of pepper. Blend everything until smooth and creamy (about 1 minute). Optional to add splashes more water to thin for desired consistency.
  • Pour into a serving bowl and sprinkle with dill, and serve with your favourite veggies. Or, drizzle over your favourite salad greens and toss to combine.

Notes

Ranch dressing will keep in the fridge for up to 5 days. Store in an air-tight container.
