Add dry ingredients to a bowl. Mix together.

Add the butter & massage with hands. Pour in agave, vanilla extract.  Mix together.

Bring together to form a dough ball. Then create a disk.

Cover & refrigerate for 1 hour. 

Sprinkle work surface with flour & roll out dough  (1/4 inch thick).

Cut round circles. Then cut a mini heart-shape to form a window with half of the cookie circles.

Transfer cookies to lined baking sheets.

Bake at 350F/175C for 10-12 mins. Remove & let cool completely.

Dust the heart cut cookies with icing sugar. Add a dollop of jam to the full bottom cookies & sandwich together
