Slice the cabbage, grate the carrot, and chop cucumber.  

Chop the peanuts, green onion, and cilantro. 

Make the peanut sauce: add the peanut butter, water, rice vinegar, tamari, maple syrup, sesame oil, garlic, chilli flakes

Cook the chickpea noodles until al-dente

Add the chickpea noodles, shredded cabbage, carrot, cucumber, cilantro, green onion, and peanuts.

Drizzle with the peanut sauce and mix to combine.
