Gingerbread Cookies

Step 1
Make the chia egg: in a small bowl combine the ground chia & water.

Beat the chia egg, coconut sugar, almond butter, molasses, maple syrup, vegan butter & spices.

Add flour & mix on low speed until well combined.

Turn cookie dough onto work surface & form a disk.

Cover in wrap & chill in the fridge for 1 hour or overnight.

Sprinkle work surface with flour & roll dough about 1/4 inch thick.

Cut out shapes with cookie cutters.

Step 8
Transfer the cookies to parchment lined baking sheets.

Step 9
Bake in oven at 350F/175C for 6-8 mins or until slightly browned on edges.
