Slice a small “X” into the bottom of each tomato and drop them into the boiling water for 30 seconds, followed by cold water.

Peel away the skins.

Chop the cucumber.

Chop the red bell pepper.

chop the shallot and juice the lemon.

Step 6

Add all the vegetables to a large mixing bowl and pour in the olive oil, lemon juice, salt and pepper.

Toss to combine.

Step 8

Blend until smooth.

Pour into bowls, top with sliced tomatoes, basil and a drizzle of olive oil. Enjoy!
