Cut a slit into the centre of each date, lengthwise, and remove the pit.
Stuff the inside of each date generously with peanut butter.
Sprinkle the dates with the chopped peanuts.
Melt the chocolate and coconut oil the microwave in 30 second increments, stirring each time, until smooth and combined.
Drizzle the melted chocolate over the dates to coat.
Refrigerate until the chocolate has fully hardened, about 30 minutes.
Optional to sprinkle with sea salt.
