Poke holes in the sweet potatoes and lightly paint with oil. Bake at 400F/200C until soft.

Finely chop red onion, tomatoes and cilantro.

In a bowl, add the black beans, tomatoes, corn, cilantro, red onion and garlic. Pour in the lime juice and olive oil. Sprinkle with  salt, pepper and chili flakes. Mix. to combine.

Make a simple guacamole by mashing avocados with lime juice and salt.

Make a simple sour cream with coconut yogurt, lime and salt.

Remove the sweet potatoes from the oven, and check that they're fork tender.

Slice open the baked sweet potatoes and fill with the black bean medley,  top with the guacamole and drizzle with the sour cream.
