Vegan Poke Bowls with Green Tea Rice
The tofu in this dish is sliced into cubes, then marinated in a lime tamari dressing to give it full flavour. Then it’s decorated in a bowl with asian favs: avocado, edamame, green onion, cilantro, toasted peanut and sesame.

Ingredients
Main Ingredients
  • 1 package tofu
  • 1tbsp sesame oilplus more if needed
  • Tofu marinadesee recipe below
  • 1 1/2cups brown rice
  • 3cups green teasteeped for 10 minutes
  • pinch salt
  • 2 nori sheets
  • 3tbsp tamari sauce
  • 1cup edamamecooked
  • 2 avocados
  • 1/4cup cilantroplus more if desired
  • 1/4cup peanuts
  • 4 green onion
  • sesame seedsfor topping
  • 1-2 limes
For the tofu marinade:
  • 1tbsp almond butter
  • 1tbsp tamari
  • 1tsp coconut sugar
  • the juice of 1 lime
  • 1/4cup filtered water
Instructions
  1. Start by pressing your tofu to release excess water. Remove tofu from package and rinse. Wrap tofu in 5-6 sheets of paper towel to fully cover. Then wrap again with a clean dish towel. Set tofu against solid surface, like a wall, and place a few heavy books on top to help press out the excess water. Leave tofu to press for 20 minutes. Then, unwrap tofu and cut into small cubes.
  2. In a skillet add sesame oil, bring to medium-high heat and add tofu cubes searing each side until golden brown (1-2 minutes). Add more sesame oil if needed to stop tofu from sticking to pan. Transfer tofu to paper towel to absorb excess oil.
  3. Prepare your tofu marinade: In a small saucepan add almond butter, tamari, coconut sugar, lime juice and water. Bring to medium heat and stir to combine. Turn heat to low and add tofu cubes to saucepan. Gently mix to cover tofu with marinade. Let tofu marinade for at least 10 minutes, pouring sauce over tofu occasionally with a spoon to ensure all is coated.
  4. Next cook your green tea rice. In a saucepan add brown rice. Bring to medium heat and toast brown rice, stirring often until fragrant (2-5 minutes). Pour in 3 cups green tea and a pinch of salt, and bring rice to simmer. Cover with lid and boil brown rice for 30 minutes, or until cooked.
  5. Rip nori sheets into small pieces and fold into cooked brown rice, pour in tamari sauce and fluff with a fork to combine. Cover saucepan with clean dish towel and place lid on top. Let rice sit this way for 10 minutes before scooping into serving bowls.
  6. Now prepare your toppings: chop avocado, cilantro, green onion and peanuts. Add chopped peanuts to saucepan and bring to medium heat. Toast peanuts until golden brown.
  7. Scoop green tea rice into bowls and top with tofu, edamame, avocado, cilantro, green onion and roasted peanuts. Sprinkle with sesame seeds. Pour reserved tofu marinate overtop of bowls and serve with 1/2 lime.
