Pineapple Parfaits

These Pineapple Parfaits are getting me in the mood for bikinis and beaches! Can you think of anything that screams summer more than juicy pineapple parfaits?

I am loving how the markets are now flourishing with tropical fruits of the summer! This is always the telltale sign that summer season has officially begun. Each weekend is like Christmas in June as I arrive eager to discover which of my favourite summer fruits will be waiting for me now. A couple weeks ago it was strawberries, next cherries, and soon peaches I hope! Literally, hand me an apple right now and I might just throw it to the floor in disgust. Just kidding! I would totally gobble it up! But, with this heat I can’t take my eyes off those juicy tropical fruits like pineapple and kiwi. I think it’s all the bikini workouts I’ve been doing with Tone It Up that has me thinking of pineapples, coconuts and Miami beach.

I might also be going crazy for tropical fruits as tomorrow we leave for a 10-day vacation! Although not necessarily a tropical one; we’ll be spending it in Italy travelling to Chianti, Sienna and Sardinia. And knowing I’m so close to vacay is making me feel beach ready! These pineapple parfait are exactly what I envision eating as I sit by the poolside and soak in those summer rays! This pretty parfait is made by splitting a pineapple in half and cutting out the core, then filling it with coconut yogurt, and topping with chopped kiwi and banana, a handful of cherries, and sprinkling with granola, coconut shavings and rose petals.  It’s so simple to throw together (which is perfect when we want to be spending our time out in the sun instead of in the kitchen),  and the combination of fruits and yogurt is a beachy summer bliss! Plus, you feel like a total boss eating yogurt parfaits out of a pineapple! Way to up your parfait game.

I’ll leave this blog post at that – short, sweet and simple. Because that’s exactly what I these parfaits are. Short on time, sweet on the tastebuds, and simply delicious! Now I’ve got to stop that day dreaming and get on packing! Otherwise I’ll be arriving with nothing but these parfaits in hand! But I can think of worser things.

Pineapple Parfaits
This pretty parfait is made by splitting a pineapple in half and cutting out the core, then filling it with coconut yogurt, and topping with chopped kiwi and banana, a handful of cherries, and sprinkling with granola, coconut shavings and rose petals. Ingredients
  • 1 pineapple
  • 1 cup coconut yogurt or soy yogurt
  • 1 kiwi sliced
  • 1 banana sliced
  • handful cherries
  • 1/4 cup gluten-free granola
  • 2 tbsp coconut shavings or to sprinkle
  • rose petals to sprinkle optional

Ingredients
  • 1 pineapple
  • 1 cup coconut yogurt or soy yogurt
  • 1 kiwi sliced
  • 1 banana sliced
  • handful cherries
  • 1/4 cup gluten-free granola
  • 2 tbsp coconut shavings or to sprinkle
  • rose petals to sprinkle optional
Instructions
  1. Begin by cutting your pineapple in half. Remove the core using a sharp knife.
  2. Fill the inside area where the core had been with yogurt. Then top each with sliced kiwi, banana, and some cherries.
  3. Sprinkle pineapple parfaits with granola, coconut shavings and rose petals.

*Note: serve with a sharp knife to cut out pieces of pineapple as you munch!
