Peaches ‘n Nice Cream

There’s no bursting my bubbles with these Peaches ‘n Nice Cream cones! I must say since the summer started I’ve been on a huge nice cream bing, buying sacs of banana’s at the market to be sure I’m set for the week. Honestly, one would think I had a pet monkey I’ve been buying so many! But it wouldn’t be summer without double scoops of nice cream, and this peachy version of the beautiful blend is the perfect summer treat.

What I love about this nice cream is that it SO much resembles the real kind. You wouldn’t believe how well frozen bananas fluff up and gather air to be so creamy and light. I mean just look at it – if you told me you scooped this out a tub of Ben and Jerry’s I’d believe it!

I must say that I think I’ve got my nice cream making skills down to a science now. It just took about 10 tonnes of bananas to master. But now I’ve proud to say that this blend makes the fluffiest, thickest, creamiest nice cream that will blow you away! And you won’t believe how easy it is! Yes, I know I always say this, I could make it my catch phrase by now, but it’s so true.

This nice cream recipe only uses 4 ingredients: frozen bananas, peaches, coconut milk and vanilla. That’s all! Toss into a food processor and churn yourself into a beautifully thick and fruity nice cream that will have you requesting double scoops!

So how do we get it so thick and fluffy? I my process of potentially being the banana industry’s number one buyer I found that the best way to make your nice cream creamy and consistent is by first pushing the frozen fruit through the grater setting on your food processor, and then mixing it with the blender once they are grated. I think because the grating allows the pieces to be smaller the processor is better able to fuse the flavours together when you start blending. And you avoid getting stuck with big hunks of banana or fruit. It seems like bit extra work, but actually it ends up being less time spent in the long run because you’re not constantly turning off the food processor to fold over the nice cream where it’s not blending. If you like the soft serve style you can serve the nice cream immediately after blending. But, if you prefer a firmer ice cream that scoops round balls (like in the pic above) put the nice cream in a freezer safe container and let it chill for 2-3 hours. This is what I did to get those beautiful bulles of heaven.

It’s safe to assume that I’m totally sPEACHless when it comes to this fluffy Peaches ‘n Nice Cream. It’s such an easy recipe that will have your ice cream needs fulfilled all summer long.

  • 2 cups frozen peaches
  • 2 cups frozen bananas
  • 2 oz shots coconut milk 1.5 fleach
  • splash vanilla

  • 2 cups frozen peaches
  • 2 cups frozen bananas
  • 2 oz shots coconut milk 1.5 fleach

Instructions
  1. Working in batches of two: push 1 cup frozen peaches through your food processor using the cheese grater setting. Then push 1 cup frozen bananas through.
  2. Remove grater from food processor and push in the blender setting. Add 1 shot coconut milk and a splash vanilla. Blend nice cream mixture until smooth (2-5 minutes).
  3. Transfer nice cream to a parchment-lined freezer-safe container and cover loosely with foil to help freeze. Place in freezer to chill.
  4. Continue Steps 1 and 2 with the second batch of frozen peaches and bananas, and blending again until smooth. Transfer second batch of nice cream to the parchment-lined freezer-safe container and cover loosely with foil to help freeze. For soft serve style ice cream serve right away, for a harder ice cream place back in freezer for 2-3 hours. Set out at least 20 minutes before serving for easier scooping. Optional to top with star sprinkles and a cherry on top.
