The weather is warming and do you know what that means? Ice-ice baby! It’s time to whip up a batch of fruit infused ice for some cold and refreshing spa water!
In case you’re wondering, “spa water,” is what I refer to as water infused with all the bells as whistles. A mix and mingle of berries, mint, citrus, cucumber and ginger. That which you might find at fancy spas and hotels. I swear this spa water makes me feel 10x more beautiful, refreshed, and capable of handling the heat than my sweaty reflection suggests! (Remind me to avoid mirrors for the next 4 months will you?). I truly don’ think I could get through the hot summers in my un-air conditioned home without refreshing berry infused water. And when it’s packed with delicious fruits I can drink at least triple the amount. And last time I heard drinking more water speeds up your metabolism. So bring on the spa water!! How on earth did I opt out of making this for the past nine months!? It seems like every year, as the weather warms, I am reintroduced to spa water like it’s a new revelation
I suppose there is just something about drinking berry infused water on a hot sunny day that can’t be replicated year round. But of course, in order to maximize its deliciousness the water must be as COLD as can be. Drinking strawberry water at room temperature just doesn’t have the same “aaaaahhh” feeling. And so this is why these fruit infused ice donuts are so handy to have in your freezer. Not only do they keep your water refreshingly cold, but they infuse it with berry flavours at the same time! Oh, and as for the donut shapes? That’s just because everything is cuter in donut form! Who doesn’t want a glass full of donuts? Of course regular shaped ice-cubes will also do just fine. 😉
Another thing I like about the fruit infused ice donuts (or cubes) is that you can use either frozen fruit or fresh. Whether you have to pay an arm and a leg for fresh berries, or whether you can’t part from tossing the fresh version into the freezer, and handful of frozen berries works perfectly fine in this recipe. Frozen berries also adds that beautiful multi-coloured affect as the colours blend into each other. It’s sort of like tie-dye ice art. You toss in the berries into water and wait a couple hours in anticipation to see the outcome. It’s always different and always beautiful. For these fruit infused ice donuts I’ve used a mix of fresh strawberries, frozen blueberries and mint. If I were to do it again I think I would ditch the mint, or add the mint straight to the water instead of freezing. The mint didn’t turn from frozen to thawed as nicely as the fruits did. The mixed fruits however are perfectly delicious when thawed, so feel free to grab a spoon afterwards and gobble them up! It’s drink turned dessert? That’s a water I can get on board with!
