Today I’m sharing with you this quick and easy recipe for my Coconut Yogurt Peach Parfaits to kick off the week. It’s still a million degrees here, and so I’ve been relying soley on cold foods – like this peach parfait, chia puddings, and rainbow rolls to get me through the days. It feels like a month since I’ve been able to turn on my oven, poor thing probably thinks we’ve had a falling out.
But in these hot times I’m peachy keen for these Coconut Yogurt Peach Parfaits. They prove a perfect breakfast or snack during the warm august month – using the best of our stone fruits. Those soft and juicy peaches, paired in layers of creamy coconut yogurt and crunchy granola for a sweet and refreshing treat to beat the heat.
It seems that this year, peaches are my #1 fruit of choice for summer 2018. I can’t seem to get enough of them! There is nothing better than slurping up the sweet juice of a cold fleshy peach. It’s so refreshing and energizing. I love this parfait because it lets our glorious peaches take centre stage, having them the only fruit to make an appearance in this delicious parfait. Because why entertain any other fruit when we’re peachy keen on peaches?
But the best part of all is just how simple this recipe is. In fact, it’s so simple that it seemed almost too straight forward to share, but I wanted to do so for this exact reason – to show that we don’t need to get fussy or finicky to enjoy a really good thing. Especially in august when we should really be spending as much time by the pool soaking up the last of those summer rays before the ground is once again covered in a thick sheet of snow.
3-ingredients is all you need to indulge in this dream combo: fresh peaches, coconut yogurt and granola. If you are feeling like an achiever though I’d recommend making my detox granola for the granola layer – it’s premium in this parfait, and you know exactly what’s gone into making it. But if it’s too hot to fuss then just opt-in for the store-bought kind. Those store-bought granolas can be sneaky with their caloric intake though so beware. Be sure to read the ingredients and nutrition facts when selecting, and make sure there is 7g or less sugar per serving. This is what was recommended to me by my nutritionist a few years ago and it’s always stuck.
