I may have missed #avomonday and #toasttuesday, but that won’t stop me from tucking into this gorgeous gourmet toast! Citrus Avocado Toast with Cashew Cream Cheese. Yes, it is as dreamy as it looks!

Turns out, toasted bread isn’t just relegated to sliced tomatoes, avocado or peanut butter and jelly toppings. This gourmet citrus avocado toast takes it to a whole new level. It all begins with a sweet cashew cream cheese to spread, topped with fresh citrus fruits (orange or grapefruit), and thinly sliced avocado.

I love feasting on this dreamy toast for breakfast, lunch (with a side of soup), or for snack time.  There is nothing that says you’ve got life all figured out than feasting on some pretty pink toast. Talk about a living in a Pinterest post! This dreamy toast is as classy as sitting down to afternoon tea at the Ritz. So feel free to whip out the fine china! But honestly, these toast are so much more than just pretty. They are a creamy and light delight! The combination of sweet cashew cream cheese and creamy avocado paired with citrus fruit, all atop of crunchy toast is a heavenly combo.

The citrus in this recipe does wonders as a toast topper. I love adding fresh fruit to the top of my toast instead of jam. In fact, I don’t know why jelly get’s all the glory when we can add freshly cut fruit instead. It has a much lighter, brighter, and not-too-sweet taste making you feel satiated, but also refreshed. Jam can be a bit of a sugar overload, especially as I tend to pile it on thick. And so I’m constantly ending up with head spin from the sugar high, followed by a huge crash come afternoon. Fresh fruit, however is the perfect amount of sweet, with no added sugars, and you know exactly what’s in it. And apparently citrus fruits releases its sugars slowly into the blood stream, so we can avoid that afternoon crash altogether – BONUS! Plus, you get to enjoy all the fruity juices that come from every citrusy bite. And with citrus season in full swing, my are they juicy.

Citrus Avocado Toast with Cashew Cream Cheese

Ingredients
  • 1 cup raw cashews soaked in water overnight
  • 2 tbsp nutritional yeast
  • the juice of 1/2 lemon
  • 1 tbsp agave
  • 2 tbsp water
  • pinch sea salt
  • 4 slices bread of choice toasted
  • 3 oranges (blood orange navel and/or grapefruit), peeled and thinly sliced
  • 1 avocado thinly sliced
  • sea salt and pepper to sprinkle
  • parsley chopped, to sprinkle (optional)

Ingredients

Instructions
  1. Begin by making your cashew cream cheese: in a blender add soaked cashews, nutritional yeast, lemon juice, agave, water, and sea salt. Blend until smooth, adding a splash more of water if needed.
  2. Toast sliced bread and top each with a thick layer of cashew cream cheese. Then top the toasts with sliced orange, and avocado. Sprinkle with sea salt, pepper, and chopped parsley.

Note: Cashew cream cheese will keep in fridge for up to 1 week.
