So, let’s get started on how to make these simple Apple Oatmeal Breakfast Muffins.
Apple Oatmeal Breakfast Muffins
Only 10 ingredients are needed in making these warm and comforting Apple Oatmeal Breakfast Muffins. The ingredients are simple, and you probably already have them in your pantry. Which is why I’m giving this muffin recipe my newbie cook stamp of approval.
To make these Apple Oatmeal Breakfast Muffins, you’ll need:
- gluten-free large flake oats
- chia seeds
- almond milk
- pure maple syrup
- coconut oil
- vanilla extract
- baking powder
As you can see, the ingredient list is pretty straight forward, And if you don’t already have them on hand, they can be easily found in most grocery stores.
The steps for making these muffins are effortless. Simply toss everything in a bowl (minus the grated apple), and let soak overnight. In the morning, add your grated apples to the mix. Scoop the batter into a muffin tray and bake. It couldn’t be more simple.
Vegan Baking: Using Chia as an egg substitute
Now, if you’re not used to vegan baking you’re probably wondering how these muffins stay together without egg? That my friends, is the chia. Chia is a great egg substitute for all kinds of vegan baking. It helps to thicken and bind the batter together, just like an egg would.
For this recipe, I’ve kept it simple by adding 1 tbsp chia to the batter to help with binding. Often, I will grind the chia into a powder, so that when added to a liquid it resembles much the same consistency as an egg. However, since this recipe is already quite textured with the oats, I’ve bypassed this extra step. (But I do often do this with recipes like my Flourless Chocolate Chip Cookies).
If you don’t have chia, you can also sub the chia for ground flaxseed. Flax is often used in vegan baking as an egg substitute, although I find that chia is a highly underrated and stellar alternative to the egg.
A few notes about these Apple Oatmeal Breakfast Muffins
As mentioned above, this recipe is super simple to create. And anyone can do it! Which is why I’ve given it my newbie cook stamp of approval. But, there are a few notes to really perfecting these vegan breakfast muffins every time.
First, it’s best to leave sufficient soak time. We want to give the oats and chia sufficient time to soak in the almond milk to get an ultra moist muffin. My recommendation is to soak the batter overnight and cook in the morning. But if you forget this step, or want to make the muffins same day, I recommend to wait at least two hours for soak time.
Lastly, it’s best to add the grated apple at the end, mixing together with the batter just before cooking. I like to do this so that the apple doesn’t get too browned and soggy.
