It’s an easy recipe to prepare in advance, and you can freeze it too!

It’s no surprise that I’m a BIG fan of baked oatmeal recipes! My blueberry banana baked oatmeal is a weekend ritual in our household. Also, I frequently make my baked apple oatmeal cups for snacks on the run.

However, I thought it time to create another flavour for you; cue this Chocolate Chip Banana Baked Oatmeal.

Well friend, this recipe was a HUGE hit! My husband absolutely loved it and we’ve made it three times in just one week! I’ve also shared the recipe with a few of my neighbours and their kids adored it.

What I love so much about this recipe is that it’s popular with both kids and adults. My 3-year-old niece loves this recipe as much as my 32 year old husband! haha. Funny how some flavour combos just never get old.

I also find this recipe a nice change from traditional oatmeal. Although I love to make my Easy Oatmeal Recipe for breakfast, it’s more suited as a recipe for one. But this recipe feeds a crowd.

This chocolate chip banana baked oatmeal recipe is also a good meal-prep recipe to enjoy breakfast through the week. The leftovers are just as good as the day you made it. And, it makes enough to feed 8 people.

How to make this baked oatmeal

It’s so easy to make this baked oatmeal recipe. In fact, I encourage you to get your kids involved because it’s so easy and fun to make.

First, we’ll add all of our dry ingredients to a rectangle 8×11 inch baking dish.

Next, add the wet ingredients and whisk everything together with a fork to combine. (See image 1 below).

Sprinkle with chocolate chips and bake in the oven at 375F/190C for 25 to 30 minutes. It’s optional to drizzle with a bit of peanut butter when finished. Let cool for 10 minutes, slice and serve!

What type of oats to use

I’m often asked what type of oats to use in my recipes. There are so many different types of oats, and it can be confusing to know which variety you need. 

For this recipe, and in most of my recipes, I’ve used rolled oats.

Rolled oats are very popular and versatile. They have a chewy, soft texture, and a creamy consistency when cooked.

Are chocolate chips vegan?

If you’re vegan then keep in mind that not all chocolate is vegan. So, you’ll want to check the ingredient list when purchasing chocolate chips.

Most chocolate that’s 70% dark or higher is what I like to call “accidentally vegan,” especially if it’s a quality brand as they’re using more pure ingredients. The same goes for semi-sweet chocolate chips. Check out this article from Spruce Eats to know; is your chocolate vegan? and what brands you can find at your local grocery store.

Storage and reheating tips

This recipe will keep for up to 5 days. Store in an air-tight container in the refrigerator.

Alternatively, you can cover your baking dish with some plastic wrap or reusable wrap and place directly in the fridge.

Be sure that the banana baked oatmeal has cooled completely before storing.

To re-heat, microwave in 30 second increments for 1 to 2 minutes. But also, this recipe is really delicious cold!

Can you freeze chocolate chip banana baked oatmeal?

Yes! You can freeze this chocolate chip banana baked oatmeal! Let it cool completely, cut and store the individual pieces in air-tight containers.

To reheat, pop in the microwave at 30 second intervals for 1 to 2 minutes, or until desired temperature.

Or, you can freeze the entire bake (uncut). To reheat, cover the top with tinfoil and pop in the oven at 350F for 20 to 25 minutes.

Chocolate Chip Banana Baked Oatmeal

  • 2 medium bananas , mashed (3/4 cup mashed)
  • 1 tsp pure vanilla extract
  • 2 cups almond milk
  • 1/3 cup maple syrup
  • 1/4 cup peanut butter

The rest

Instructions

  • Preheat oven to 375F/190C. In a rectangular 8×11-inch baking dish, add the oats, ground flax, baking powder, cinnamon, and salt. Mix together.
  • Add the wet ingredients: mashed banana, vanilla, almond milk, maple syrup and peanut butter. Whisk with a fork to combine everything.
  • Sprinkle with chocolate chips and bake for 25 to 30 minutes, until the edges are lightly brown and the mixture is set. Let cool for 10 minutes before cutting into slices and serving, or allow to cool completely. Optional to drizzle with more peanut butter and sliced banana for serving.

  2. This looks delicious and I’m planning on making it but can oat milk be used instead of almond milk?

    • Hi Stacey! Great question! Yes, you can substitute with any plant-milk of choice. Oat milk would be delicious in this recipe. I will mention though that oat milk is slightly sweet so it might make your bake slightly sweeter than my version. But delicious nonetheless!
